This is my attempt at Turmeric Cauliflower Steak with Coconut Sauce, created by Farm Drop's recipe developer, Beth Thomas. I came across it when reading Crumbs Magazine. This month is The Vegan Issue and the guest editor is Rachel Demuth from Demuth's Cookery School based in Bath.
Rachel writes an inspiring article in celebration of Veganuary in recognition of the rise in veganism as well as a growing trend of Flexitarianism - apparently 1 in 3 of us are actively reducing their meat intake. What a result! There are some lovely plant-based recipes in here too. Here's one I cooked earlier.
I've never cooked a cauliflower steak before and it did not disappoint. Roasting the cauliflower like this gave it some real bite and something to really chew on. The leaves, part of the cauliflower that is often thrown away, went beautifully crispy when cooked.
This recipes is great. So many flavours going on. And how lovely to see a veggie taking centre stage on the dinner plate. I shall certainly be cooking this again, and I recommend it to anyone, vegan to not.
