Vegan Mayonnaise

There are lots of different Vegan Mayo recipes out there but I think this one is my favourite. It's made with 6 plant-based ingredients, Silken Tofu being the star of the show. And it's easy peasy to make. 

Spread it in a sandwich or dip your chips in it. It's a great base for a ton of dishes such as potato salad, pasta salad, jacket potato topping and lots lots more. For garlic mayo, simply add a bigger clove of garlic.






300g Silken Tofu, water drained

Half a lemon, juiced

2 tsp - 1 tbsp of Apple Cider Vinegar

1 tsp of Dijon Mustard

1 small clove of Garlic

Pinch of Sea Salt, to taste

1 tsp of Extra Virgin Olive Oil

Small bunch of Chives, finely chopped (optional)




Firstly, drain the silken tofu in a clean tea towel or muslin and squeeze out all the excess moisture. 

Put all the ingredients in to a blender. Put the minimum amount of apple cider vinegar in and add if you require more. Blitz until smooth. Do the taste test to see if the balance of flavours are to your satisfaction.


Garnish with chives, if using.
