I think I may be a little bit obsessed with avocados lately, much like most of us in the UK and beyond. I've always called it Nature's Butter - so creamy and versatile. It can be used a savour or sweet ingredient. But sometimes, you just can't beat it in it's pure and simple form, with a little help from their ingredient friends.
This is vegan breakfast but scroll down to the bottom of the page for my Flexi Tweaks.
1 ripe Avocado, peeled and stonedQuarter of a lemon or lime, juiced
1 Garlic cloves, peeled (optional)
1 tsp of Olive Oil
2 large pieces of good quality bread or 4 small ones, lightly toasted
1 red chilli, deseeded and thinly sliced
Half a tsp of Sesame Seeds
Firstly, toast your bread in the toaster or under the grill. Then take your peeled and stoned avocado and put it into a small bowl. Use a fork to roughly crush the avocado up so there are still come chunky bits.
When your toast is ready, take the clove of garlic (if using) and rub it evenly onto each piece of toast until it is all gone.
Now spoon the avocado onto each piece of toast. Drizzle evenly with olive oil and season with salt and pepper. Then sprinkle over the sesame seeds and top with the chills. Finally squeeze a little lemon/lime and coriander on top.
