This classic pesto is made from just 6 fresh ingredients. It's so simple to make and really healthy. It makes a great sauce to your pasta, livens up a sandwich or salad, and goes amazingly on poached eggs!
Pesto is not strictly vegetarian because it uses parmesan cheese. For an alternative cheese you can use hard goats cheese. I've not yet created a plant-based pesto but it won't be long I promise, so keep following.
Makes 165g of pesto
1 clove of garlic, roughly chopped
30g fresh basil leaves
25g Parmesan, finely grated
50ml of Olive Oil
1 lemon, juiced and zest grated
Blend all the ingredients, except for the lemon, salt and pepper, in a magimix or similar. Or better still, use a pestle and mortar to pound all the ingredient to a nice smooth paste.
Season the pesto by adding the lemon juice, salt and pepper bit by bit until you are happy with the balance of flavours. One lemon should be enough but your personal preference may mean you require more or less than this.
